While coffee beans can’t be grown at scale in Canada, Trebilcock bridges the gap between global farming and local roasting in a truly authentic way. With a family-run farm nestled in the highlands of Colombia and a roasting facility right here in Pickering, Ontario, they offer a one-of-a-kind connection from bean to brew. Rooted in Colombia, Roasted in Pickering

Trebilcock isn’t your average local coffee roaster. They own the farm literally. Every spring, during the coffee harvest season from April to June, the Fernandez family travels back to Colombia to work alongside their relatives on the land. As Chalo and Diana shared with us during our recent visit, “It’s a family thing. We grow it there, roast it here, and serve it with care.”

The farm’s high elevation and nutrient-rich soil help produce complex, flavorful beans that reflect the best of Colombian terroir. But it’s the hands-on care, sustainable practices, and deep family ties that make the coffee truly special.

Back in Pickering, those same beans are roasted daily, often just steps from where they’ll be served. Whether it’s a medium roast crafted with precision or a single-origin batch from Nicaragua or Ethiopia, each roast is a celebration of the journey behind it.

What struck us most during our time with Chalo, Diana and the Trebilcock team was their belief that coffee is about connection. As Diana said, “When you drink coffee, you’re enjoying it with people. It brings us together.”
